RED CHILE CHILAQUILES

Ingredients:

  • One dozen corn tortillas (count as least 2-3 tortillas per serving)
  • 16 oz. red chili (prepared or canned, prepared recipe follows)
  • 1/2 lb. Monterrey Jack cheese (shredded)
  • 1/2 onion (diced)
  • Onion powder (1/2 tsp.)
  • Garlic powder (1/2 tsp.)
  • Salt, to taste
  • Olive oil

Instructions:

    1. Blend red chili with a 13oz bag of our Rancho Dos Compadres yellow or white tortilla chips until all tortilla chips are coated. Season with garlic powder, onion powder, and salt to taste.
    2. Bring to a boil and reduce heat, let simmer for about five minutes. Top with shredded cheese and diced onion to your liking.
    3. Additional add-ons to your liking:
    • Fried egg
    • Shredded lettuce
    • Diced tomatoes
    • Sour cream

RED CHILE SAUCE

Ingredients / Instructions:

  1. New Mexico style, One lb. dry red chile pods (hot or mild to your taste)
  2. Clean pods, removing stem and seeds
  3. Rinse well.
  4. Put in pot, cover in water. Boil until soft.
  5. Put in blender, adding boiled water from pot as needed.
  6. Purée in blender until smooth.
  7. Pour thru strainer.
  8. Ready to use.

HOMEMADE PANCAKES

Ingredients:

  • 1lb Chicken Wings
  • 1 Bottle of Our Wing Sauce
  • Salt to Taste

Instructions:

  1. Preheat oven to 400°
  2. Place a wire rack on a large baking sheet
  3. Spread wings out across wire rack in a single layer, bake 35 – 40 minutes until cooked through and crispy
  4. Toss in our Wing Sauce and enjoy!

GUACAMOLE

Ingredients / Instructions:

  1. 3 Ripe Avocados
  2. 1/2 Red Onion
  3. 1 Jalapeño Seeds Removed
  4. 3 Tablespoons Fresh Chopped Cilantro
  5. 1 Lime Juiced
  6. Salt and pepper to taste

Instructions:

  1. Split avocados and remove pit. Scoop out flesh into mixing bowl
  2. Mash avocado with fork to desired consistency (smooth or chunky)
  3. Combine with all other ingredients
  4. Serve with our fresh tortilla chips!

HOT WINGS

Ingredients:

  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 egg beaten
  • 1 1/4 cups buttermilk
  • 2 Tablespoons melted butter
  • 3 Tablespoons sugar

Instructions:

  1. Split avocados and remove pit. Scoop out flesh into mixing bowl
  2. Mash avocado with fork to desired consistency (smooth or chunky)
  3. Combine with all other ingredients
  4. Serve with our fresh tortilla chips!
